Breakfast: This morning's breakfast was great. I only had a little cream of wheat left so I cut up a bunch of oranges. The last two bags of oranges I got from WM have been terrific. Never buy oranges from Sam's again. I also made toast and jam. Very filling and healthy.

Lunch: Left-overs - we had left-over refried beans - Glen at those with some left over chips Vance had made. Morgan had beans and weenies, Tristan had chicken, Will had chicken with a buttered tortilla - they all had a whole apple. Need to buy more apples (and more oranges) OH and some sour cream. I think Rachie only ate an apple and nothing else. Ryan ate the last of the left over chicken and I smell some toast in the toaster right now - I'll have to get up and scold him for that (lunch has been over now for at least 30 minutes). I had left over fish and rice. Little bit of a smorgasbord today.

Dinner: Something that I can do in the crock pot with chicken and potatoes. I'm sure I'll figure it out.

Breakfast: Cereal

Lunch: Mac n' cheese and fruit.

Dinner: Another old stand-by - fish, rice and broccoli.

I've been working on my FlyLady routines so my goal is to have dinners planned for a whole month and be able to work from a shopping list for those dinners and stay under $400 a month. I think this is going to be hard, but do-able.

Sunday night was had Hamburgers - this is definitely a favorite and I forget to do it in the winter time. We were able to have the hamburger as left-overs for lunch the next day - easy and good. Vance cooked chili-dogs the next night - the boys weren't to thrilled to have that for lunch the next day. Hot dogs two days in a row is not a favorite around here - I need to remember this.

It's crock pot chicken tonight as Vance is out of town and I have one class to teach at 4:30 and then worship practice at 6:30pm. Glen and Ryan will be babysitting so I have to have everything ready for them so they don't have to worry about it. Lord, I pray tonight goes smoothly.

Breakfast: Cream of Wheat, toast and oranges. On Monday I made six cups of cream of wheat and it wasn't enough. Today I made 8 cups and it was way too much.

Lunch: Tater tots, corn dogs, fish sticks, orange slices and bananas.

Dinner: The Elk steak with balsamic onions, corn bread and greens was a huge hit. I'm still trying to perfect my corn bread. I want it to be more solid and less crumbly and sweet as well. We're almost there.

I have no idea what I'll make for dinner tonight, but I'll be working on a menu for the month and going to Sam's tomorrow, so I'm sure I'll get an idea from that list.

Breakfast: the old stand-by: cereal.

Lunch: Top Ramen and tacquitos - a choice - and really healthy.

Dinner: I found a new blog called 5DollarDinners. There was a great recipe for (what I will call) Elk Steak and Balsamic Onions in the crockpot, served with corn bread and greens. Can't wait to try it.

My Little Hunters




I suppose I should have posted this one on our food blog.


A few weeks ago Vance took the boys down to Colorado City where he has a custom home he's painting. They took their rifles and hunted for rabbit (that's rifles and not shot guns). When it comes to rabbit it's easier to hunt with shot guns because of the bigger spread, but both boys shot one rabbit each with their .22s. I was impressed.


When they got home they both cleaned, gutted and prepared their own rabbits and we breaded them and fried them up. Didn't have to worry about shot in the meat. I have to say that it did taste just like chicken and as you can see from the picture it looked just like as well.


The boys were extremely proud that they got to provide dinner for their whole family that night.

Breakfast: Cream of Wheat - or quick Farina :)

Lunch: Oven pizza.

Dinner: I'm not sure what we're going to have yet, but we have some hot dogs in the frig that need to get eaten before they go bad and I would hate for them to go to waste. So, I'm going to do another search on Bing and hopefully come up with another new recipe for the family. Will update tomorrow.

This day seems to be everyone's birthday.

Breakfast: the old stand-by - cereal.

Lunch: Lots of great left-overs in the frig - nothing going to waste.

Dinner: Another new dish to use up some bacon that has been the frig for some time and needed to get used as well as some thawed chicken that I didn't want to go to waste. I went to Bing and typed in chicken and bacon recipes and came of with this very delectable baked chicken. Since there was a lot of fat in the recipe I decided not to have a starch with the dinner so it was baked bacon chicken with steamed broccoli. Absolutely NO leftovers! Will definitely do this one again.

Breakfast: We ate the cinnamon muffins because the chocolate was all gone.

Lunch: Tried to do left-overs from the night before, but no one was up for it. Can't remember what we had.

Dinner: Fried chicken, mashed potatoes and fresh brussel sprouts. Absolutely delicious. This was the real crowd pleaser. Vance has been working an hour and a half drive from the Springs so he's been getting home late. I makes sure he's got a nice warm plate waiting for him.

Breakfast: Muffins - the kids loves the muffins that Sam's makes and they're a real treat. I got chocolate and cinnamon. I don't know why I bother with the cinnamon when everyone just wants chocolate :)

Lunch: Top Ramen - I'm sick of it, but I guess they're not. It was a special request from Kael.

Dinner: I've decided that I'm going to try a few new dinners and the goal to use ingredients in the pantry and frig to make sure we don't let anything go to waste. We had a new dish from the Hillshire Farms website called "Crowd Pleaser" It was Kielbasa in a crock pot with BBQ sauce and spaghetti sauce mixed together. Everyone ate it, but didn't want left overs the next day. Vance said he like it and it reminded him of pizza. It wasn't my favorite and I'm not sure I'll ever make it again.
